Olive oil is made with selected olives. Our Grappas are made from marcs and distilled with the classic discontinuous alembic in a bain-marie.
The slow distillation gives to the Grappas a bold balanced perfume; their taste is clean and intense, typical of red marcs. Don’t forget our Limoncello and the exceptional Lemon and Chocolate Creams!
Cheeses: the working with raw milk and the sheeps which crop particular and native grasses give to the Salentino Cheese a typical taste of hazelnut and almond.
You can also taste the Salted Anchovies according to their classic preparation: they are first salted, then they are pressed with a stone as in the earliest times.
The classic snails “moniceddre” make up the real refined dish of the tradition of Salento.
